Varietals: Merlot (55%) Cabernet Sauvignon (42%) Petit Verdot (3%)
Tasting Notes: : Beautiful dark color with garnet-red highlights. The bouquet is straightforward and fresh. Elegant and perfectly balanced on the palate, this wine's long finish is complemented with lovely hints of fresh fruit. Château Haut de Baradiou epitomizes the finesse of its appellation. Delicious with pressed cooked cheeses, kebabs and grilled meats, especially lamb.
Aging: 12-16 months in French oak barrels (1/3 new, 1/3 used from 1 previous vintage, and 1/3 used from two previous vintages). Experiments are done in conjunction with a local cooper (barrels made with different types of oak).
